My Favorite Baking Product & Pumpkin Recipe

It’s Friday again, thank goodness. These days feel a little reminiscent of last September as we were preparing for Brighten. As we pack up our first home and prepare for the weeks ahead, I can’t help but be a little too sentimental, but also wish we could fast forward about two weeks. I guess things are more fun when you have to work for them, but I have to say that packing up this house would be way more fun if someone else did it. 

Anyway, all of that aside, today’s Friday Favorite is extremely practical, and I’m even adding a bonus - my simple pumpkin muffin recipe! 

Parchment Paper Baking Cups

Every year I make my pumpkin spice muffins this time of year. It's literally the easiest recipe that I know of (keep reading and I'll share it with you), but because it doesn't have many baking ingredients, I struggle with the muffins sticking to the baking cup paper. A few weeks ago when I was in Target gathering the ingredients for my muffins, and I came upon parchment paper baking cups.

I love how functional they are, but I also love their crafty look. They have made my weekly baking endeavors so easy. I definitely won't be purchasing the paper baking cups or even more of the silicone baking cups!

Easiest Pumpkin Muffin Recipe EVER!!!

Ingredients:

  • Spice cake mix
  • 1 can of pumpkin
  • Mini chocolate chips AND/OR chopped pecans

Directions:

  1. Preheat oven to 350 degrees.
  2. Empty the can of pumpkin into a mixing bowl.
  3. Slowly stir in spice cake mix.
  4. Add chocolate chips and/or pecans.
  5. Stir until everything is mixed well.
  6. Add a large tablespoon of mix into lined muffin tin.
  7. Bake for 20 minutes.
